Lamb Stew in a Crockpot Ingredients • 1 large onion chopped • 3 stalks celery chopped • 1 c. carrots chopped • 2 lbs diced stewing lamb, season with salt and pepper • 3 c. Yukon Gold potatoes peeled and chopped • 48 ounces beef broth • sprigs rosemary • 2 cloves fresh garlic • 1 head rainbow Swiss chard (just leaves, chop fine)
Instructions Place the ingredients into the Crockpot in the following order: chopped onion and celery, lamb, potatoes, broth, and spices. Set the Crockpot to low and cook for 6 hours. Or, on high and cook for 4 hours. Add Swiss chard to crock pot and season with salt and pepper let sit for 10 minutes Serve with fresh bread. .
